From the Good Eats episode “Sprung a Leek

3 quarts oil (peanut, vegetable, or canola)
12 ounces leeks, cleaned and trimmed of dark green parts
1 1/2 cups milk
1 large egg
2 cups all-purpose flour
2 teaspoons kosher salt, plus additional for seasoning
Preheat the oil in a heavy 5-quart pot over medium-high heat to 375 degrees F.
Slice the leeks into 1/2-inch wide rings, separating them 2 layers at a time.

In a medium mixing bowl, whisk together the milk and the egg. In another medium mixing bowl, combine the flour and salt. Divide the flour into 2 separate, shallow dishes and place the milk and egg mixture in a third. Going 1 small handful at a time, dip the rings first into the first flour mixture, then into the milk and egg, and then into the second flour mixture. Working in batches, fry the rings for 1 to 1 1/2 minutes, or until golden brown. Remove the rings to a cooling rack set inside a half sheet pan and allow to drain for 2 to 3 minutes before serving. Ingredients

  • 2 cups of flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup of water


Steps

  1. Put the flour into a medium size bowl. (You can use more to make a larger batch, just double the recipe.)
  2. Add the baking powder.
  3. Dissolve the salt in the water. Heat the water to almost boiling.
  4. Create a well (indentation) in the flour. Slowly add the water while stirring with a fork.
  5. Continue stirring with the fork until you can’t mix it anymore.
  6. Now take off all jewelry and start mixing/kneading the dough with your hands.
  7. Keep kneading until all of the flour is mixed in. The dough should be slightly sticky but not hard. You can add slightly more water or flour if needed.
  8. Now take a rolling pin and pull off a small portion of the dough (about the size of a golf ball).
  9. Place it on the counter where you have sprinkled flour. Roll it out until it is as thin as you can make it.
  10. Place the rolled tortilla on a hot griddle (without grease) and cook on one side until you see it bubble.
  11. Now flip to the other side and cook for a few seconds.
  12. Continue in this manner until all your dough is cooked.
