Anne's Macaroni and Cheese

This is the macaroni and cheese I had as a kid.   Nothing beats it when you are looking comfort food.  I've toyed with the recipe just a little, and this is my version.

Ingredients

8 ounces elbow macaroni 2 tablespoons butter 1.5 cups cubed sharp cheddar cheese 1 teaspoon kosher salt 2 eggs, beaten 3 cups whole milk paprika to taste (I prefer hungarian smoked) black pepper to taste

Instructions

  • Heat oven to 350°.
  • Place macaroni large stock pot, with enough cold water to cover by about an inch.  Heavily salt the water with kosher salt (should taste almost like seawater).  Turn burner on high and bring to a boil. Reduce heat to medium and simmer until noodles are not-quite-al-dente.
  • While pasta is cooking, cut cheddar cheese and butter into cubes.  Cheese should be in about ½ cubes.
  • Drain macaroni, and place in large mixing bowl.
  • Add cheese, butter, salt, and fresh-ground black pepper (ground very fine).  Mix until butter is mostly melted.
  • Turn into a 1.5 quart baking dish.
  • Blend together eggs and milk.  Pour milk over macaroni mixture in baking dish.
  • Sprinkle with paprika and additional black pepper.  Add additional shredded sharp cheddar cheese to top for a crispy crust.  (No bread crumbs, please!)
  • Cover with foil and bake for about an hour.  Remove foil and cook until done.
  • There you have it.  The original recipe didn't call for black pepper to be included while baking or the shredded cheese topping.  I also added my preferred method for boiling pasta.

    The only part of the original recipe I disagree with is the note on the bottom of my mom's recipe card: "Velveeta is a good substitute for cheddar."

    Install Sun Java on Ubuntu 12.04

    The following code checks to make sure it isn't already installed, and then automatically accepts the Oracle license agreement.  If you have an existing copy of the JDK in your home directory, it will use that copy rather than downloading a fresh version.
